This recipe is from my Aunt June Contini….She has had this recipe since 1973, it is her mom’s recipe and it is pretty basic, or so I have been told. Now truth be told, I haven’t tried it yet,,,but it is one of my husbands favorites, so I will make them very soon! Just needed to share this recipe with you all, so here it goes!
Grandma Nichols Sliced toast Cookies/Biscotti
2 Cups Sugar
1 Cup Butter
1/4 cup anise seed
2 tsp. vanilla
1/4 tsp. anise flavor
2 TBLS water
5 1/2 cups flour
1 TBLS baking powder
Mix in bowl- cover and refrigerate for at least 1 hour
spread in 13 x 9 pan
Bake at 375* for 20 minutes or until lightly brown
cool …..then slice…..
Bake again until looks lightly browned, makes ALOT
The dough will be thick,

This is how her mom Grandma Penny made it and I am pleased that Aunt June shared this recipe with me. Like I said before, my husband Chris does love these cookies, so for sure they will be in my oven sometime very soon!!
Today was the first full day of my weight loss program…Now I’m not sure if I have mentioned before, that I have lost weight about five years ago on the Jenny Craig program and I loved it…it is a great program and I believe it does work! I had lost 20 lbs. for our wedding. The problem is that I lost the weight for the wrong reasons and it didn’t stay off because I didn’t stay committed to the life style change..I mean let’s face it, if you don’t continue eating in a healthy way, and make smart choices with food, you are bound to put the weight back on and that is what I did….and then some!
Okay so that said….I am sick and tired of being sick and tired and so I made a decision that enough is enough (I would like to drop 50 lbs) and I did something about it. I decided to change my pattern of eating and not exercising… I got up and went for a 2.5 mile walk before going to work today, and it made a big difference. I found myself making smarter food choices, I ate fruit, vegetables, drank more water, ate salad and I can tell you that I feel much better just thinking about making this commitment! I have decided to keep a food diary and write down everything that I eat each day along with the caloric content of the food. So this is the plan….I will post my progress each day. All of the food that I eat along with the caloric intake, my excercise program, and my weight loss as it happens. This is my way of keeping myself on track, a way of keeping myself “accountable” if you will.
Wow! Where has the time gone? My brother Danny is going to be 50 years old! How can this be? Wait a minute,,,he’s younger than me! Wow, I feel as if I am about thirty-something. Well, the truth is, he is going to be 50 and I can’t wait to go back and celebrate his “Special Event” with him! I am looking forward to not only spending time with him and my family, but also visiting some of the Great restaurants on the East Coast! Upon my return, I will be highlighting some of the places in which we have eaten. One of the things that I am so looking forward to is the Pizza. Let’s face it, most of the Pizza on the East Coast is sooo much better than what we can get here in California, I should know, I grew up in New Jersey! And I am no stranger to New York Pizza!
So Chris and I have two more shifts to pull, and it’s off to the East Coast to Celebrate Dan’s Special Event! My sister-in-law is having a company come in to turn the house into a casino, card tables and games…not sure of all of the specifics, but I do know that it will be so much fun!
I have been so busy with work lately, but now I have to shift gears and get ready to go on our trip. I don’t know what to make for our dinner tomorrow? Well, I have some of that chicken left from the Chicken that I baked the other day,,,remember? I put it in the freezer! How perfect, see what I meant about the Chicken and how much you can do with it? Okay, so tomorrow I think I will saute some garlic, add the leftover chicken, and some brown rice with a vegetable. Wow, sounds almost like a new recipe…..
Breakfast down on Main Street!!! What a pleasure!!! Sugar Shack!!! Well I can tell you that the breakfast here is wonderful…the service is great!…you may have to wait if you want the right place to sit…but just take a table, get settled…and enjoy your breakfast…or brunch…now that you are settled in, enjoy the sites and sounds of Main Street!! You are in the heart of HB!!!! Surf City!!!!
