Roasted Chicken stuffed with Vegetables

I am roasting a chicken in the oven right now.  I placed a whole chicken in the oven that I stuffed with an onion, fresh rosemary, 4 cloves of garlic, a lemon and sprinkled it with black pepper.  The chicken cavity is where I placed all of the ingredients….baked at 375 degrees.  This is what I will have for the week to add to my salads.. protein is essential when you are trying to maintain muscle during weight loss, chicken is low in fat and when baked with the cavity infused with these vegetables and spices tastes wonderful.  This chicken will be moist and juicy!


My Weight-Loss Progress!

Today was the first full day of my weight loss program…Now I’m not sure if I have mentioned before, that I have lost weight about five years ago on the Jenny Craig program and I loved it…it is a great program and I believe it does work! I had lost 20 lbs. for our wedding.  The problem is that I lost the weight for the wrong reasons and it didn’t stay off because I didn’t stay committed to the life style change..I mean let’s face it, if you don’t continue eating in a healthy way, and make smart choices with food, you are bound to put the weight back on and that is what I did….and then some! 

Okay so that said….I am sick and tired of being sick and tired and so I made a decision that enough is enough (I would like to drop 50 lbs) and I did something about it.  I decided to change my pattern of eating and not exercising… I got up and went for a 2.5 mile walk before going to work today, and it made a big difference.  I found myself making smarter food choices, I ate fruit, vegetables, drank more water, ate salad and I can tell you that I feel much better just thinking about making this commitment!  I have decided to keep a food diary and write down everything that I eat each day along with the caloric content of the food.  So this is the plan….I will post my progress each day.  All of the food that I eat along with the caloric intake, my excercise program, and my weight loss as it happens.  This is my way of keeping myself on track, a way of keeping myself “accountable” if you will.



Portobello Mushroom with Vegetable Melange

1 Large Portobello Mushroom sliced

1 Package Trader Joe’s Frozen Vegetable Melange

2 Tablespoons Parmesan Cheese

2 Tablespoons Moscarponi Cheese

Garlic Powder, Salt and Pepper to taste.

2 Tablespoons Olive Oil

Slice Mushroom and saute in olive oil until slightly tender, add 1 package of frozen vegetable melange and stir until vegetables are thawed and sauce begins to loosen, stir in Moscarponi cheese sprinkle with Parmesan cheese salt and pepper.

This is yet another example of…”wow, I need to make a dinner to take to work and I only have 15 minutes!”   This recipe is so simple and easy, yet  such a hit with my hubby, who was  again impressed!  Try this one and let me know what you think.  It will be one of my new “go to recipes” for sure!  I hope you like it as much as we did.  Go ahead…be creative!

Sprout Salad


Romaine lettuce
Alfalfa sprouts
Sunflower sprouts
Radish sprouts
Cherry tomatoes
Thinly sliced onions
Pine nuts

Balsamic Vineger

Place salad in bowl
Top with a variety of sprouts
Add tomatoes and onions
Sprinkle with pine nuts and your favorite cheese

All of the ingrediants used in this recipe came from the Farmer’s Market.
SPROUTS are a great way of adding crunch and spice to your salads or sandwiches!!  Radish sprouts add a pepper flavor, alfalfa sprouts taste like citrus,  while sunflower sprouts add a nutty flavor..
