Grilled Salmon with Vegetables

Any vegetable that you can steam on the stove can be steamed on the grill as well, as long as you wrap them in foil. Some of my favorites would have to be Bell Peppers, Onions, Zucchini and Asparagus.
Simply prepare the vegetables by rinsing them as you would before cooking them remove the seeds from the peppers and cut into quarters, slice the onions and just cut the tips off of the zucchini and slice in half lengthwise. Place the vegetables in a large piece of foil drizzle with olive oil, sprinkle with salt and pepper to taste, add as many Garlic Cloves as you would like…Can you really ever have enough Garlic? I really don’t think that’s possible. I love Garlic!! Fold the foil up and around the vegetables leaving room for steam so you have just created a steamer.
Place the Salmon in foil add fresh herb sprigs such as dill, parsley, chives fresh pepper to taste. Close the foil just as you did with the vegetable packet and place both packets onto the grill for about 10 minutes.

This is a great time to sit and relax with a glass of your favorite white wine. A perfect choice for this dish would be a Pinot Gris.
