Mock mashed potatoes (Low Carb)

1 head of Cauliflower
2 tablespoons butter
3 tablespoons light sour cream
salt to taste
cracked black pepper

Steam Cauliflower in steamer (about 15 minutes, or until tender)
Place Cauliflower in large bowl and mash
add butter, sour cream, salt and pepper

I am not kidding when I tell you that this does taste just like mashed potatoe! But one head of cauliflower contains just 50 calories…Enjoy!
