My Grandma Riccio’s Zeppole Recipe

5 Cups flour
2 packages yeast
2 1/2 cups warm water
3 large mashed potatoes (no skins)
oil to cover zeppole

Melt yeast in warm water for 20 minutes
mix in flour, potatoes, salt
place mexed dough in warm place to rise and double in bulk
(dough should be more dry than sticky)
heat oil in pan to 375 degrees
when oil is heated enough begin putting pieces of dough to fry to a golden brown
drain on paper towel over and over until not greasy
you can put powdered sugar or honey on them.

These Zeppoles are much better than any we have had at the Boardwalk at the Jersey Shore!
