Tofu and Eggplant Stir-Fry

INGREDIENTS

1 block of. Firm Tofu, Cut into cubes (I like Trader Joe’s)
1 package of Trader Joe’s frozen eggplant and zucchini blend
2 tablespoons sesame oil
3 cloves of garlic, chopped
Stir-Fry Sauce
Salt to taste
Pepper to taste

Heat Wok,into Wok place 2 tablespoons of sesame oil,
add Tofu and defrosted Eggplant,
Saute for 3or 4 minutes
add 3 garlic cloves and continue to stir,
add salt and pepper
Serve over white rice
